Manuel Mercier was raised in Paris, France. When he was 16 he received a summer job in the Majestic Hotel in Cannes while his family was on holiday. His summer job turned into a career. He studied as an apprentice to the executive chef for three years. He then traveled all through Europe to enhance his talents. He spent many years in London at the Grosvenor House Hotel. In 1988 he decided to see more of Europe and became an executive chef on Ocean Cruise Lines. He sailed out of Copenhagen for about six months and toured the Baltic states.

MaryAnn Mercier is originally from Staten Island, New York. She started working directly out of high school for Autranet, Inc. a subsidiary of Donaldson Lufkin and Jenrette. She worked there for nine years as a vice president in Bond Sales. In the summer of 1988 she wanted to see Europe. She took a 14-day tour and had a seven- day cruise on Ocean Cruise Lines, where she met her soon-to-be husband, Manuel. After meeting on the ship, Manuel left his chef position and returned to Paris to work on getting a job in New York. In October of 1988 Manuel was offered a position as a private chef for the Wildenstein Gallery and household and headed for New York. MaryAnn and Manuel were married 11 months later.

The two decided they would like to run a restaurant together, somewhere outside of New York City. It was a long two-year search for the perfect place. They looked up and down the east coast. They finally ended up in Maine and saw the Youngtown Inn. In two minutes Manuel knew this was the right place, a perfect old American building. They purchased the Inn in December 1991 and have not rested yet. They have done extensive renovations over the years and have built up an extensive clientele. They are enjoying life in Maine with their growing family. They have three sons-their newest born on January 4, 1999.
